These festive (without food coloring), Pumpkin Carrot Muffins will taste just as good as they look, except no one will know that they're hidden with vegetables!
- 1 3/4 cup flour (I used sprouted spelt flour)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 egg, lightly beaten
- 1/4 cup agave syrup
- 1 cup cooked pumpkin / carrot puree (I cooked chunks in the microwave and then food-processed them)
- 1/2 cup milk (I used unsweetened vanilla almond milk, my go-to)
- 1/3 cup rice bran oil, or your favorite cooking oil or melted butter
- shredded unsweetened coconut, optional
